As long as your camera can output signal and connect our capture card through HDMI cable, you can connect to TV and other devices to output signal, and you can also achieve real-time acquisition through OBS

How can i view captured video without an external recording/streaming app? (like obs) is the control delay of the game i'm capturing unavoidable?

OBS should give you a live preview of the capture. Any app that can display a web cam’s output can display the capture device’s output. Be warned: there IS a delay imposed by capturing the video, converting it to send over USB-C, then decoding that to display on-screen. Whether that delay is a problem depends on the demands of the game.

How can I record a HOW TO video with a fire stick as the source? What app can I use on my laptop to record the input?

OBS Studio, Media Player Classic (or similar programs and project forks), most every webcam viewing/saving tool, and maybe some ways to record with VLC Player, SnagIt, Camtasia, etc.

Fonctionne super pour capturer un flux HDMI vers un pc. J'arrive a récupérer le flux vidéo sur HDMI en sortie de télécommande d'un drone et de l'envoyer sur OBS pour streamer via mon ordinateur. Attention que si le périphérique est reconnu comme usb2 il faut retourner le connecteur usb-c et il sera vu comme usb3
