Is the flat side ok to sharpen flat carving knives? I'm looking for both, flat and curved tools sharping stone.

Yes, chisel, knifes and anything you can move across the stones.

Can the stones be kept in water ready for use of do they need to dry out?

Not sure if your constant exposure approach would be destructive, but they seem to be solid as apprised an extruded slurry. What I'm doing is soak both for 15-30 minute and leave 1000 grit stone in while working with the 400 grit. Then swapping out the stones in the bath bucket to work with the 1000 grid. Good luck!

Can you sharpen flat edged 1 inch 1/2 inch etc chisels or is this kit just for curved chisels? thanks

I sent mine back because none of the curved profiles of the stone matched any of the curved chisels I had, so it was worthless to me. If I remember correctly, you could hone flat on the other side, but overall it seems like a rather low quality stone. I’ve never seen a sharpening stone that is “pebbley”.

can these be used to sharpen flexcut tools ?

I would think so. If you can sharpen them on regular stones I would think these would work. I never used them with that tool(s).

Very nice set

Really nice! Set comes with the two stone pads and wood holder, each stone also has a plastic protector on the bottom, that fit the wood holder and they stay in place. Package foam insert also is nice to set in tool drawer to safely hold everything . Was a bit concerned after receiving that the stone contours were not as pronounced as in pictures but after trying all my chisels match up well. Well worth the cost!
