Is it necassary to add weights on top of the press or is the top board and wing nuts enough for say......asiago cheese?

Your supposed to put a weight on top of it.

Can i put in the fridge so cheese can be pressed and harden?

Best not to. The wood is flexible and the temperature from hot to cold would take away from the integrity of the wood which needs to stay in firm shape to press and form the cheese. You just put your pressed cheese in fridge after pressing

To the seller: When bolts are tightened very well, what is the maximum pressure that this cheese press place on the cheese (in lbs per square foot)?

I've put 60 lbs of books on it and it was fine but I don't think you could put any more weight on it...good product
