Pleasantly surprised by the taste and texture!
These are excellent. My 11 yr old enjoyed them. I've made keto bread recipes in the past and have always been disappointed by texture and flavor. I was so surprised by these! I love that there isn't a laundry list of ingredients, it strikes a fair balance. We swapped butter for refined coconut oil because my son cannot do dairy. We followed the instructions except for a few things: we didn't put the oil in the freezer, and just incorporated pea sized amounts as instructed but at room temp. We also didn't use a biscuit cutter and didn't stretch the dough out as thin as it suggested. Still came out great: they had a nice inner moisture and had a crust-like exterior. There was no eggy flavor. They may have come out even better if we were precise with the directions. I had to keep my son away from a third helping! We didn't have any troubles with digestion either. These will be our go-to option for sure! g

Great Texture

Interesting
I don’t know how they did it, but the mix does produce a biscuit quite easily. My son loves biscuits but I was never a fan. I always found all biscuits dry, so the fact that these are dry is not off putting at all. They are easy to put together, and my son was very impressed. He ate them with butter and low carb jam, and he liked them very much. Because of the price, we won’t buy these frequently, but I would buy them again to make the family happy. In that regard , they were a success. They baked quickly and easily, and were much appreciated by all the males in the family, but especially by my son. He always did like biscuits, so he was very happy with them. I made them smaller and got a larger yield. The texture and taste were fine, if somewhat dry. They are edible, unlike a lot of low carb products that I have bought, and they went over well with the biscuit eaters. I have also purchased their pizza crust mix, and am making a pizza this weekend. I’m happy I discovered the mixes, and happy that the family liked them. I had half a biscuit which was enough for me. Expensive but well worth it in terms of pleasing the family. Surprisingly palatable, very expensive, but specialty products generally are. In regards to making someone happy they are worth an occasional splurge and that’s priceless.

My theory for the few bad reviews...
I suspect there are two main types of biscuits out there in the world, and this mix recreates one of them, but very much not the other. This biscuit mix recreates the homemade biscuits my mom made as a kid perfectly! I think she called them drop biscuits. Their dense and doughy with a slightly crunchy outside. This is very different than the canned biscuits (Pillsbury, etc) which have the sort of fluffy layers. If you're looking for those, this is definitely NOT that. People keep saying they don't rise, but mine were the perfect texture for this kind of biscuit. I personally like this kind of biscuit way better than the fluffy layered biscuits from cans. I just hand formed this mix, and did not use a cutter like the directions ask. I did follow the directions of having the water cold and the butter frozen. It all went very smoothly considering I only did a fourth of the package so had to guess my own measurements. I even baked them in an air fryer on a silicone tray and they were perfect! I only made two chunky biscuits and they were quite filling. They're expensive but considering my diet is damn near carnivore, this is just something I'm going to keep in the freezer to pull out every now and then for a treat. I also bought some bamboo fiber which I'm going to experiment with, because that's supposedly a really good keto flour.

Good but not great
I made one package of the Scotty's Biscuit mix per instructions on the the back of the package. I found the biscuits to be a bit dry and dense. Flavor was ok but not something that has me jumping to buy another package at this price point. I'm into my 4th week of Keto for the 2nd time so have a pretty good memory of what real biscuits taste like and these definitely fall short. Hoping the the pizza crust and bread mix has a better result. I had a craving for biscuits and gravy so I wanted to try and easy to make biscuit that doesn't require me to source a bunch of ingredients. This fit the requirement nicely and they were easy to make. If I do feel the need to buy it again I think I would jazz up the recipe with some garlic butter and cheddar. Using them as a side item for dinner instead of for biscuits and gravy. I feel if you are on a low carb diet these are worth a try but temper expectations.

zero flavor I will not buy again
Followed the directions, these have zero taste. As in no good, will never buy these again ! Couldn't even finish off the one full batch only ate less than half. Even with sausage gravy they're just no good. Sausage gravy is fine it had taste like it should. If you like a tasteless product as in zero flavor then buy these. Otherwise spend your money better elsewhere.

Good drop biscuits
These are not flaky biscuits but drop biscuits: Skip the folding step. You’ll need ice water, a frozen stick of salted or unsalted butter (mix has plenty of salt), a box cheese grater, a mixing bowl and fork, a sheet pan with parchment paper, and a measuring cup. Follow the directions, except skip Step 7 and 8. Make 8 four-inch balls of the dough. Place on parchment paper on tray and then flatten the tops. They should be about 1.5-2 inches thick. Cook for 10 minutes only. They continue to cook when you take them out, so do not overcook. Cut along the edge with a serrated knife. Good with cheese, bacon, or sausage, or toasted. Does not flake apart which is great for breakfast sandwiches. I’ve also made BBQ chicken sandwiches with these. Tastes pretty much like regular drop biscuits, but I might experiment with adding herbs to the mix. Scotty’s pizza mix is good, too. EDIT: I tried 1/2 cup low fat cottage cheese instead of butter (again skipping Step 7 and 8) per another commenter “S” instructions. Made 8 crunchier biscuits with no flavor, but much quicker, and easier cleanup. See third picture. I cooked them 11 mins. Outside crunchy, inside soft, they rose up higher. Then we sliced, toasted and added herb cheese, but much less overall calories and cholesterol without the stick of butter. Cottage cheese has carbs, so this version does have some carbs. This works fine for flavorful inserts.

Best keto substitute I’ve tasted to date.
This is it guys. If you follow directions TO A T, best biscuits I’ve ever had while on keto. It’s not like the “sure, I guess this could pass and be edible”, it actually tastes good and can even be eaten alone. No cardboard flavor, no smell, and no grainy consistency. Carb count is low and is still delicious. Will ONLY be buying this even if I go off keto now. I recommend cheese grating the frozen butter not doing small chunks.
