A good idea. An okay execution
I thought the idea of a system that could produce a lot of pearls at one time would be a good idea for bulk molecular gastronomy. It sounded way better than trying to do it with just one syringe and dropping them one at a time, especially when trying to serve immediately. Enter the spherical caviar dispenser. It came in a cardboard box with adequate shipping protection, and I was excited to try it out. It comes with a little tray (I'm assuming that can hold about 75 ml of liquid, which is what they say should be the minimum for a vacuum), but when I didn't want to use it since the process would then be: fill the tray, fill the dispenser, dispense, then fill the tray again. I used a different tray that I could still ensure full vacuum suction. The box came with some instructions for making a mixture, but I decided to go with a different website's recipe. I tried to fill the dispenser as per their instructions, but it seemed like a lot of air was going in, and not a lot of liquid. I also expected the dispenser to be able to do more than one drop at a time, as per their picture, but that also didn't seem to be the case. I'll give it another try again, but as of now these first impressions are that it's a great idea, but it's hard to get going. Maybe I'll try the recipe the way they suggested.
