hi, what is the height between shelves and can they be removed?

Yes they can be removed. There are three positions points for the shelves. mine are all set at 38cm the centre point. they can be repositioned easily 7cm up or down.

Where does the LED strip go?

I put it just on the inside at the front on recess

Back panels, any photos as review says looks tacky so undecided if to buy.

Not tacky at all in my view. Good value for the money.

Could I buy extra shelves?

The internal frames act as supports for the glass shelves. It would be unlikely to be able to add more shelves in my opinion. However a carpenter might have a different view. In my opinion more shelves would spoil the look. Good luck.
