Is this one better than the S3?

I have not owned the S3. All I can tell you is that this one is the best I have tested. Your head will not go anywhere, your neck won't bend and you will be fresh during your trip. I usually wear it, my noise cancelling headphones and a plane blind fold, and I can sleep for hours on a comfy chair.

I have a long neck, will this support my head completely while I sleep on a plane?

Yes, the Cabeau Evolution Cool neck pillow has adjustable front toggles that can be tightened to create additional head support. For people with taller or thinner necks, there are also two upper pivots you can loop the cords through to provide increased head and chin support.

Will this work with them Bose Quietcomfort over ear headsets?

For most people, yes. The Evolution Cool was specifically designed with curved sections on each side to allow for wearing over-the-ear headphones. If you have a shorter neck, then wearing headphones with any travel pillow could be more problematic.
