Question 2

I am not sure if I should order the 9 in. or 12 in. for kitchen use? I do have petite hands if that makes a difference. I cook a lot of roasts.

I have 2 of each and use the 9" more frequently due my style of cooking.  I will say that searing off roasts is when I do reach for the 12" so I can grasp the thicker roast but also I can use both hands if needed on the tongs. they are a good, stout tong.  If you can get both, I bet you would find you use the 9" also.  happy cooking!

Question 3

My previous stainless steel tongs' plain steel spring rusted out. Of what material is this tongs' spring made?

It's printed on the side of the tongs that they're stainless steel. I'm not sure if that refers to the tongs, only, or the entire tong, including the spring. That said, they haven't rusted or turned in any way. I love these tongs, and I use/wash them almost every day.

Question 4

Why is There no locking mechanism on these? I purchased these. No lock.

I bought the 9" which definitely has a lock, best set of tongs I've ever used. The lock is inconspicuous but works perfectly. I think if you look at the images of the 9" you will be able to see it. 
I did not purchase the 12", so I don't know if they are different.
