How do you store this? Refrigerator or no

Ciao,

Parmigiano Reggiano should be stored in a cool cellar below 14°C/57°F under vacuum or at best in the refrigerator. You can store it under vacuum for up to 6 months.

Once opened wrap it in the greasproof paper we will send you and store it in the refrigerator, or vacuum pack it again if you have a vacuum sealer.

If you want, you can freeze it, but I recommend against it as it tends to lose its taste.

Parmigiano Reggiano is a PDO  product (protected designation of origin) and is made only in the territory of origin (Emilia) according to the production specification verified by the protection consortium and the European community.

Parmigiano Reggiano is made only from raw milk and aged for a minimum of 12 months before becoming Parmigiano Reggiano.

According to the "Cattle Feeding Regulations" of the Parmigiano Reggiano consortium, dairy cows can feed on fresh fodder obtained from natural meadows.
