Excellent quality, and very light. I use this flour for the sole purpose of sprinkling my sourdough baskets and the top of my sourdough before cold retard in the refrigerator because I find AP flour too heavy for that purpose.

I use this for bread baking, sourdough in particular. This works amazing for keeping things super non-stick. It also doesn't burn, so it works great making designs show up really well.

It’s more expensive than buying it at grocery stores, but it’s a good option if you have trouble going to the mall or live far from Asian grocery stores.
