Excellent, strong, the good stuff
This is the real stuff: extract of Ceylon Bark. It has a sharp bite, just like you'd expect. Remember when you were young and you bought cinnamon toothpicks from that kid who pulled them from a small glass jar where they had been packed in cinnamon oil? Those toothpicks that burned the skin off your tongue for a thrill? They were soaked in cinnamon oil like this. Don't be tempted by cheap imitations like cassia oil; that's not real cinnamon oil. You'll be disappointed if you go that direction, I promise. (I speak from angry, ripped-off experience.) Not only is that stuff weak, the taste is wrong. Stay far away from cassia oil or "Cinnamomum cassia" or whatever else they're trying to pass off to fool you into thinking you're getting the real cinnamon extract you're expecting. I'm looking at you, Watson. Stay with Cook's Ceylon Bark extract and you should be fine and satisfied.

Now, THIS is more like it!!!๐ I CAN ACTUALLY TASTE THE CINNAMON FLAVOR!:This brand is made STRONG, like when I was young! I'm at the threshold of 70 now, but I am the youngest of 11 siblings and my mother had me in the kitchen with her BEFORE I STARTED SCHOOL!!! THIS is the taste I remember from back then. THIS IS A RARE FIND that has brought back those memories and I'm here CRYING now! ๐ฅน๐คฏ

This is the real stuff. Edible - for cooking. But I suppose it could be used as an essential oil too. Commercially made spiced apple rings seem to be a ghost of holiday past. But there are some recipes on the internet. I recently decided to take the plunge and try to make my own. It turned out great. But there's one caveat. Those recipes that call for "red hots" or "cinnamon Imperials" candy seem to give better results than the recipe calling for straight cinnamon sticks or powdered cinnamon.. But those candies have absolutely zero cinnamon in them. None whatsoever. And that bothered me. There are recipes to make those candies using cinnamon extract like this product. I wanted to make a hybrid cinnamon spiced apple rings using this extract instead of the candy. It worked great. I managed to use a bit less sugar than called for, and what I considered a generous amount of this extract. Which is still a pretty small amount. The results tasted just like the original recipe calling for the candy. So now I have a local holiday tradition resurrected from the grave. And in a much more natural way thanks to this cinnamon extract. My hybrid spiced apple rings lack the color, but a drop or three of red dye would change that. I opted not to, and the whole family was perfectly happy with that decision. Modern times, I suppose. 11/10 I highly recommend cooking with this extract. After many dozen reviews, this is the very first time I've ever given an 11/10.

Excellent!
This review is for the CINNAMON product, because for some reason reviews are scattered through here for every other extract produced by Cook's. Excellent cinnamon flavor - actually tastes like cinnamon (versus he numerous Ceylon cinnamon "supplements," which essentially taste like sweetened water, with no flavor or smell). Ceylon cinnamon (Cinnamomum verum) also contains much less coumarin than Casia cinnamon (Cinnamomum cassia), so is safer for those with a compromised liver or those taking statin drugs. With either variety, a little goes a long way so moderation is the key. Recommended.

weak and tasteless
I used this to make hard candy.. I recently picked up this habit of making my own candy because I'm cheap.. My only comparison is to the brand that is sold by the dram.. My recipe calls for 2.5tsp, normally when you add any extract to 310+ degree sugar is burns off VERY quickly and leaves my forehead very RED for a bit.. When I used this it was a very tiny burn off and then nothing.. So I have my candy and it's FAINTLY cinnamon not the smack you in the mouth that I was after.. This is VERY weak , I used enough that it should be strong however it's not..

Not spicy enough
I was disappointed with this. My recipe called for 1 teaspoon but I like it more spicy so I doubled to 2 teaspoons. Still barely tasted the cinnamon
