Why is a paid sim necessary? satellite phones should let you call from anywhere without reliance on the network?

These services are facilitated by the SIM card inserted in the satellite phones. It's very similar to using a SIM card for cellular service only that satellite communications use a different network structure.

I drive for living and sometimes I go to Alaska and nother Canada which is the best card that will fit me best??

If only used in Canada and Alaska, then the Canada/Alaska prepaid is best. If you intend to use this in the Continental US or any other country, a Global card is necessary.
