Can the cups handle hot beverages (hot chocolate...)?

Yes I've used it with hot beverages as it is also dish washer safe.

Is there a listing for the 20pc set that lets you pick one color? I can only find sets with the mix of colors which do not fit my lifestyle or needs.

Does it come with that plate holder in picture?

I did not receive a plate holder. And when I purchased it was not purchased as a twenty piece which was in 2021. So it could very well be different and maybe they added that in. Back then. It was not a package deal. I hope this helps.
