Will these stand up when empty for ease of filling?

Not until you get the first 30cm of so of fill in them. There is a simple fix though. I use 4 lengths of rebar (metal stakes) and tie the handles to them so that they hold up the corners. These are great bags for the price, so I would not let that put you off.
