What is the black cloth that comes with the product used for?

It's used for the clear plastic window to keep the potatoes dark and then when you want to check on how they are growing you can take off the black cloth and check them, and then put it back on until the next time you want to check the growth of your potatoes.

Can you place these on top of dirt in your yard or are placing them on patio stones better?

They can be placed on either. I placed mine on top of the dirt

I've been thinking that with the "logic" most air bottom bags(or "bags" in general) are better for the plants in general because their "Roots breathe better"- not 100% how true it is BUT.. IF "bags" are great for cannabis roots because it allows them to access air easier& better, than why not use bags with openings? Plus how cool would it be to see the diff "seasons" of growth & rootage
