Would mineral oil eat away at this material?

I am not 100% sure but the line should stand up to mineral oil.

It says not for under hood applications does that mean only under car hood? I'm going to use it in a jetski which is Inside the hull of the ski

Who is the mfr of the hose? i know the seller is ldr/jackson supplies.

The best place to find that is contact company direct. There are tons of manufacturers of hose. Be aware that some is not suited for long term use, drys & cracks. The last thing you need for of all things fuel. what you need to ask is what the material is used

Would this stand up to brake fluid? Want to use on a rear master-cylinder reservoir on a motorcycle.

The line will hold up to brake fluid but I wouldn't use it on the pressure side of your system. Get a high pressure braided line to run back to your caliper.
