This is a new ingredient to me. I wanted to try it on salmon with honey, garlic and ginger. It was fantastic. It made the meal have a wonderful unami savory flavor.

great white miso flavor, lots of umami taste. good size portion for single person.

Listen, I read all the reviews. I looked at all the pictures. I knew that there was a huge possibility that I would be receiving black miso, but I figured I would try to order this affordable white miso because everything else is just so much more expensive. I really wanted to try NYT’s miso chicken recipe and I wasn’t about to pay $17 for 16 ounces of white miso. Therefore, I purchased this to try just in case I didn’t like the flavor. Again, it’s a disgustingly brown black color but the chicken came out great. My 10-year-old son loved it. My 75-year-old mother loved it. It came out pretty decent. I don’t know how much of the success of this dish was due to the miso or the recipe, but it worked. However, I’m giving it four stars simply for false advertising.

It’s red, salty, and yummy. As long as one knows they are buying red Miso they will be happy to get it for the price of white. I knew it was going to be red so I am happy with the product. Yet at some point it’s going to turn back white when I’m hoping to buy red, and I’ll have to use a white one instead of a red one.

This miso is expired and has been re-labled (you can see where the old "best by" label has been removed). Shiro miso is a lovely ivory to light gold color not brown. Amazon won't refund food items, so just avoid this.

Helps flavor and gives Miso soup a good consistency.

UPDATE: This seller proactively reached out to me after reading my review and offered a full refund. I am VERY IMPRESSED with their customer service and would try again with this seller especially after being informed that "if the product you receive is too dark or too light for your liking please message the seller and they will exchange or refund your order."Original Review -----------------------------------------------------------------------This is my first time cooking with White Miso so I didn't know what it was supposed to look like or smell like. I did think it was strange that it wasn't anything close to the color white. I tried it once and did not care for the pungent smell or extremely overpowering taste. It wasn't until I was at TJs and saw white miso there that I realized what it was actually supposed to look like new and that the reason mine smelled so bad is because it was bad.Unfortunately this product is non refundable so I can't even get my money back for something I have to throw away.

I added it as sort soup mix puree with variety of things , It was a tasty delicious spice tang all together.This white miso soybean paste first buy attempt on this kinda of thing is pretty good. The package may seem kinda small for first time buy but price not bad ethier , so better buy as many as 2-5(maybe freeze a few for when needed) next time. As well fridge the opened ones and use within 5 days ya.
