Is this router a selectable dual band or simultaneous dual band?

A dual-band WiFi router simultaneously broadcasts separate 2.4GHz and 5GHz frequencies (bands), allowing your WiFi devices (i.e. smartphones, computers, TVs, etc.) to connect to one band or the other at any given time, depending on whether each WiFi device supports 2.4GHz or 5GHz (or both) connectivity. By default, the router will broadcast both bands simultaneously; however you can disable one, or both if you prefer, within its configuration settings.

how many devices can this handle? I would like to know the actual number of devices it supports. I have 50 plus with all the smart bulbs and switches.

According to the Tether app, with everything on I have right around 65 total connected devices. 10 of those are wired, five of those are 5 Ghz, which leaves 50 on 2.4 Ghz. The wired devices are mostly high bandwidth stuff, TV/DVR/laptops/server. The rest are mix of Amazon products, and mostly Kasa/Wyze/Shelly smart home devices, cameras, and my car. I can't recall the last time I had a drop out. Compared to the issues I was having with my previous generation TP-Link router and every Netgear product I ever owned, this thing is just amazing.

Can this router enable bandwidth restrictions per device? (not just qos) tp-link routers seem to do this, but not sure of specific models?

The Archer AX21 offers QoS that can be applied globally on or a device priority basis.

Will it work with Google assistant?

If by "work with" you mean can Google Assistant enabled devices (i.e. Google Home) that connect via WiFi be connected to the router? If so, then yes. However, if you are inquiring whether the router can be directly integrated with and controlled by Google Assistant, then no - not at this time. That being said, it does support the TP-Link Router Skill via Amazon Alexa.
