Have they done the update with the additional games?

yes and no, the first update only unlocks 2 games so far, there are 18 more. Metal Slug 1 and 2 have been unlocked so far.

Is this stick compatible with the PS5?

It comes with a dongle for the ps4 but i doubt it has support for the ps5, if i can connect a ps4 controller to the ps5 via usb, then this shouldnt be a problem but you have to take the risk, for now is not confirmed

Is this the uncensored version where blood shows in red in games like Samurai Shodown, or is this censored US version with white blood?

I believe there is a sub menu from which you can choose to play the u.s. or the Japanese versions of all games
