How well will these attach to painted, textured sheetrock walls? I'm a little paranoid about hanging paintings on the wall with them.

They hold a trench coat and 2 xl hoodies and i believe they could hold more weight if the hook was bigger. I hope that helps. (On textured sheetrock)

I have 3 hooks on my door that broke, but adhesive part still is on the door. Can these hooks replace the broken ones which "slide up to remove"?

No! The adhesive is one time use. The hooks can be replaced or interchangeable with other command strips but the command strips themselves or not salvageable. I had a couple break and had to toss them I tried this theory it did not work

What are the physical dimensions of the sticky area only, not the overall strip?

The adhesive on the wall side area measures 0.652" x 2" and 0.652" x 1.797" on the hook side to fit on the back of the Medium sized hooks.
