Are these roast to order or have they been roasted some time ago?

In December I received a bag that was roasted in August (ie four months ago). This coffee was stale in both aroma and taste. So I’m not sure I believe the hype from Blue Bottle about it tasting fresh for “150 days.” BUT, the good news is that if you purchase from Blue Bottle as the seller (not a reseller), they’ll take care of you if you contact them.

Is this coffee kosher certified?

Is there going to be a bright and balanced combo pack?

I bought the bright and bold pack and it was a set, but they came in two different packages. I wasn’t very good.
