Will this amp power 2 10in 4ohm 600rms subs

You'll only get 400W RMS delivered to each sub. If you could get subs with dual voice coils at 4 ohms each, then they will have a parallel combination of 2 ohms per sub. Then you will see the 600WRMS for each sub.

What's the difference between the gmdx971 and the gmd9701?

The difference between the 971 and the 9701 is the 971 has hold plated rca's and the 9701 does not. God plated is always a better conductor which means less interference when it comes to connections and sound quality and distribution

Description says 1 channel amp, the pictures show 2 channel. Which is it?

It is a 1 channel amplifier. It has two terminals that are really only one channel. This is so you can hook up two subs in parallel at the amp instead of on the speakers. If you are hooking up only one sub, it doesn't matter what terminals you hook up to since its really just one channel.

What is the wattage at 4ohm, and are the 2 channels visible on the amp bridged?

This amp cannot be bridged its a class D Amplifier which means both channels have same output, you would have to look at specs
