Delicious risotto

Best rice for risotto - no question about it
After discovering this rice at Fresh Market and getting rave reviews for a simple risotto, I won't use any other. Fresh Market stopped selling it and my family noticed a difference when I tried to substitute other brands. Glad I was able to find it here and stock up. It makes a very creamy risotto that simultaneously keeps the perfect al dente quality in each grain.

Been buying vialone nano for many years instead of arborio for risotto—on Scott Conant's recommendation, as I recall. When my previous brand became unavailable a while back, I switched to Campanini and have been very pleased with the results. Grains are vacuum packed: if you're one of those people who thinks that hurts the rice, look elsewhere.

Made excellent risotto
I used this to make saffron risotto and it didn't disappoint my 7 guests. Cover the rice in chicken stock for 15-30 minutes and drain while reserving the stock to add during cooking.
