Flan Mold with Lid - Authentic Mexican Flan Pan - Molde para Flan - Flanera

This flan mold pan is great! I used it to make flan for my first time and was given a 100% perfect review by my neighbors who are from Mexico and Puerto Rico. The lid works perfect for keeping the water out. However, it is not airtight as it should not be because steam needs to get inside the pan to help cook the custard. After reading the bad reviews, let me offer some advice to those who obviously have never made, or researched how to make Flan before. The roasting pan for the water bath should only be filled halfway, and you should only fill the roasting pan to half the height of the Flan pan. So the roasting pan, with the Flan pan inside of it, goes into the oven before you pour water into it. Also, the areas of the pan exposed to water will turn black as it should because it's aluminum. The change in color doesn't affect the capabilities of the pan. And if your caramel is crystallizing as soon as you pour it into the pan and you don't like that, then you need to prepare a wet caramel. Any caramel made only from sugar will crystallize the second it hits any cool air which has nothing to do with the pan that you're pouring it into. That is a problem with how you made the caramel. I made the same mistake my first time, although it still came out amazing. I prefer making wet caramel now because it's easier in preparation and cleaning. The pan is very thin which is great and what it should be for cooking this specific dessert. The size is also the exact size for Flan recipes. The recipes will say that 9" is okay too, but it's not. If you want to make Flan that tastes better than cheesecake, then use this pan. I am told that my Flan is better than cheesecake. I have ordered more of these so that I can make more than one at a time. Making Flan requires more than a good mold and recipe. Any techniques are involved in the process. I'm not sure if I can post my recipe here or not.

I rarely go back years later to write reviews on previous purchases that I have made, but I thought this would be worthwhile. I plan on purchasing another one so that I can make two at a time.
