Matfer Bourgeat Dough Scraper

It hugs the bowl really nice!

Great for sitting and manipulating dough- this is a second one I bought as a gift for a friend because I like mine so much!

I was a professional chef for many years. This scraper is by my side in the kitchen at all times. Not only is it the best dough and pastry scraper by far, but it doubles as a bench scraper because it is sharp and durable. I use it to carry everything from the cutting board to the pot, and then use it to clean up my work area without scratching the surface of everything with a clanking metal scraper. It works like a sharp squeegee keeping everything ship shape and so preserves your towels. Get a few of these Matfer Bourget nylon scrapers and throw those useless, flimsy white scrapers, and most of your rubber scrapers into the trash. This utensil will change your life.

I love this scraper. The curve is nearly perfect for all my bowls, it flexes with little effort and cleans off well. I do scratch-made bread mostly. Rigid scrapers don't work well on curved shapes like mixing bowls. This has made my efforts SO much easier and faster. One caveat - this does warp with hot water, it is thin plastic, so when washing off with hot water simply lay flat once clean and place a cup or glass on it. It will straighten out just fine. Highly recommended.

Best scrapers ever!

I purchased this scraper for one purpose: to scrape down the beater and sides of a KitchenAid bowl when making cookie dough, bread dough, etc. It is the perfect shape and thickness for that task and excels for this purpose. It’s the only scraper I’ve found that fits the steep curvature of KitchenAid bowls. It’s edge is sharp enough to scrape the sides clean, and it is sturdy enough the scrape underneath the mass and flip it over, making sure no dry bits are on the bottom of the bowl. I continue to use other scrapers that are wider with a gentler arc of curvature when using shallower bowls, but for KitchenAid bowls it is a game changer. I’m giving it 4 stars instead of 5 because I wish it were one inch longer. With big batches I have to wear a glove to keep dough off my fingers. That is a small price to pay for how efficient this thing is, and how much of a wrist saver it is over using a conventional handled spatula.

The shape of the curved edge is perfect for the Pyrex mixing bowls I use to make no-knead sourdough. The material is just flexible enough to give a little when scraping up shaggier doughs, and sturdy enough to hold up to tighter doughs. I bought this instead of a silicone one as I imagine silicone would have too much bend. The edge is sharp enough to use for cutting/portioning--so sharp, in fact, that you don't want to press your palm into it while using (not a problem as long as you don't have tiny hands). A simple, durable, essential piece of kit that's made my whole breadmaking process a lot more enjoyable.

I've used this one and some other spatulas/scrapers, and this one for some reason feels the best for both mixing ingredients in a bowl, and for scraping and lifting dough.
