Can it be converted to use natural gas?

Yes. Either drill through the nozzle to make the hole slightly larger or just pick up a natural gas nozzle at your local hardware store. BTU output may be different (lower) at the end. I did not see any issues with it. CAUTION: Please consider contacting an expert before modifying your gas nozzles. I am not an expert. Good luck!

How much weight will it support ? Can I expect it to support an 80 quart pot + crabs ?

Will this hold a cast iron jambalaya pot?

It holds my cast iron uzbek kazan. It is very strdy. Check if the size fits.
