Can this stand 160 degree water?

If you're asking if it can hold up to the temperatures of a dishwasher - both water and the drying cycle - yes. I used this months ago and it has held up with no visible signs of failure.

Which of the colors, light or dark grey, is a better match for ge profile silver colored racks? they look like a medium grey.

Get one of each and keep the one that's the best match and just return the other and when we get it back we will refund it. How about that?
