How well will this amp work with a 12v supply?

It should work but with a much lower output power. I use mine with an old 19V laptop power supply and it works great.

Jack plug size ? can someone tell me what size jack plug i need to fit this as i need an angled jack to replace the straight jack plug

It's a 3.5mm stereo jack plug for the audio and 12V centre pin style DC connector for the power.

Is this compatible with Apple Music?

You can stream your music from and iPhone / iPad etc to this device via bluetooth, but it's not an apple music base station.
