Does the bead peel or change color? for example when used in a ring?

The color rubbed off when I used them. I’m thinking that these are not truly Miyuki.

Delica beads are not assigned a color NAME by the manufacturer, Miyuki. Miyuki assigns a number to a color so as long as the NUMBER is the same the color will be the same even if the "color name" doesn't match.

what size is the hole?

I can't tell you exactly, but the hole is as large as it possibly could be. It's the main selling point, aside from the consistency and uniformity of delicas. They are the RollsRoyce of seed beads!
