Does this case fit a simrex x500 mini drone?

No it will not. This case is specifically cut for the DJI Mini Drone and it's accessories.

Does the the motors stick up higher than the body causing unwanted pressure on the propellers than the body?

The rotors do stick out but rest assured that there's no pressure on the propellers. The amount that sticks out is just enough and the padded upper lid holds the propellers in place but you must keep the propellers folded properly (just like the way it would've been had you kept your Mini in the original carry case).

Will this case fit the Mavic mini 2 as well?
