Are these stained or coated? If so, with what?

Hello, it's no stained. this product just colored with thin natural paint。

Why does the paint come off? Is is food grade?

My son in law is a chef and I sent these to him. He lived in SE in Asia cooking. All I can say is that he likes them. He has not mentioned troubles of any kind with these.
