Looking to replace the 2 volt 2.5 ah batteries in my quantum 1 battery pack, will these work? i'm thinking the 5ah would provide faster cycling, etc.

There is a size difference. The 2.5 ah battery is 1.35 x 1.35 x 2.68 in The 5 ah battery is 1.8 x 1.8 x 3.2 inches

When is the production date of this battery?

Label attached to Battery (voiding Warranty if removed) on a fairly recent purchase is dated 10/26/2016. Assume distributor's inventory continually rotates / expiration date moves forward. My experience has been Battery life / label expiry date are not the same > @ +charge recycled per device guidelines maintaining optimal performance & extending lifetime use. (:
