Q: How much coconut milk should be used? I used the recommended 4 cups per packet but it came out waaaaaaaaaay to watery and coconut tasting.

One of this packets serves 4 which is about 1 lbs of Meat. Per suggestions from others, 1 can of coconut milk would be more then enough. If you don't like it to taste too "coconuty" just use 1/2 of the can. Don't forget to let it simmer at low heat for about 30 minutes or until the broth becomes more of a gravy consistency. I like to use 2 packets and marinade about 1.5 lbs of meat in a zip-lock bag for about 30 minutes before cooking. Cook your meat in a hot pan with a bit of oil to seer the meat first and then simmer at low-medium heat for 30 minutes. If you can, get 1 can of beef broth "Swanson"... Use 1/2 of it instead of water, boiled it down into a pasty/gravy consistency. Hope this helps.
