Nice, very sharp boning knife. We’ve started buying larger pieces of meat at Costco and cutting them down to meal sizes to freeze. Knife was perfect to cut through thick pork loins and ribeyes.

If I was rich, I would by it again. We love Victorinox rosewood handle knives. yes I know plastic can be dishwasher safe, But we love the wood effect. How it feels in the hand is instantly forgotten so wood suits us just fine. Rinse and wide, and you're done. Sharpens easy, honing brings the edge right back, decent edge retention.

Same company as Swiss Army knives, quality is top notch. Edge holds sharpness better than cheaper knives. The perfect size to break down a sub-primal cuts. Paired with the 6” boning knife, you can process any meat you want. Best bang for the buck!

Amazing knife, very sharp and easily cut through the Rib Loin I had. Only drawback is the "blade protector" it came with was a flimsy thin piece of plastic.

Bought this for meat trimming and it does not disappoint. Retains blade well and easy to resharpen when needed. Comfortable to use for extended periods. Little on the expensive side but well worth the cost for a quality knife.
