Can these be used as weight sesnsors for diy experiments with coin/dispenser?

In theory they could - lots of electronic scales, load cells etc. use strain gauges, fitted to something that's designed to deform, bend etc. in a predictable way when loaded. If you arranged a metal strip so it bends when loaded, the "outside" of the strip would be extended (the resistance of a gauge here fixed along the strip would increase) - and the "inside" of the strip would be compressed (resistance of a gauge here would be reduced). If you were to set up something like this, you'd need to be careful to avoid damaging the gauges or wiring. It might be easier to use a ready-made pressure or load cell (load sensor), with a suitable range. Also, the resistance changes from strain gauges and load cells tend to be rather small - so you need a conditioning module (a specialist amplifier circuit - which Amazon also sell) if you want to use these. These are often used in electronic weighing scales.

Is this gauge self adhesive?

No, it's not. And it needs to be well stuck down to a suitable bar so that you can measure the stress on it when the bar bends.
