It will work, cleaning it is about as easy as it can be, but watch out, there is an internal plastic gasket that you *can't* slouch on cleaning if you are doing paste that thick. don't break it.

if just starting, should i begin with the manual one?

I'm new to the filling machine and I got the manual with the meter reading on the side. Does beautifully for me and my small business for now.

what air compressor would you recommend?

you don't need a large air compressor, air consumption requirement is only 1.5cfm-2.0cfm per pneumatic filler at 80psi-95psi. I happen to have several units and all can run at the same time on my "house air" system.
