Eden Organic Butter Beans, 15 oz Can

Hard to find in stores! Has Protein n is healthy to eat. I’m still watching for butter beans in local stores. Fair price. Taste good.

I love buying from Eden for the low sodium and quality. These were wonderful and buttery. I also buy direct from their Michigan business to get black soy beans which are the lowest carb bean. I also have bought several japanese condiments from them in Michigan. I have loved all the Eden products. I wish they were more prominent in my local stores.

These are not liked most canned beans. I was expecting lots of salt, etc. But they're just like beans you soak and cook yourself, nothing added, but minus the trouble. And they're delicious.

The can says butter beans, but they are really small like baby lima beans, about 1/2 inch in size. I was quite disappointed about this, as I was truly thinking they'd be actual butter beans as labeled.That said, they are still tasty and creamy. They are cooked through, so it's best to add at the end of the dish if adding into sauces etc. I especially love these beans in curries.

I love these beans (though I call them "baby Lima beans"), and this is the only good online source I've found for organic ones. I would rather have dried organic baby Limas, but these will do. They're super nutritious, which is good, because I love them so much. They're nice and soft, almost pillowy. I once had baby Limas in an expensive restaurant, and they were served hot as a side dish, cooked with pickled sliced onions and topped with either olive oil or butter (or both), and wow, were they ever good!! I don't remember anything else that I ate from that meal except for the Lima beans!!I love to use these in a type of simple and easy Italian stew. I just cook up equal portions of black and brown rice (the black rice gives an excellent texture), then add a can of organic fire roasted diced tomatoes, and add the drained baby Limas. It's so darned easy and gives complete protein due to the combination of grains and legumes. I add Italian herbs while it simmers, and I'm thinking of adding okra, because the okra seeds provide an additional texture which I think would work great in this simple stew. Plus someday I will add chopped up sauteed soy curls and that, too, will give great texture. But the Limas are my beans of choice for this stew. I've tried Cannellinis and Great Northerns, but both were not as nice as the baby Limas, I thought. I highly recommend these perfect Lima beans to use in your recipes and culinary creations!!!
