Having family with allergies (especially corn allergies), I have learned that King Arthur Flour is one of the only flours I can trust to be free of byproducts or corn mixed with their flour. IT is always of fantastic quality, light, and fluffy, rarely needing to be sifted. Most importantly, though, it always works well and makes the best cakes and cookies. They also have instructions on the box and on their website to help bakers, making it very easy to use, and you always know the quality will be there. This flour makes the softest cupcakes. I purchased this after I decided to make the King Arthur vanilla cupcake found on their website. I debated between buying this or sifting all purpose flour. Since I was making the cupcakes for a friend’s birthday I decided to follow the directions to the “t” and I do not regret it. This flour made the cupcakes sooo soft and smooth. It was a new experience for me, everyone raved about the cupcakes. I made them a second time for a baby shower and they didn’t last long. I will keep a box on hand for when I’m looking to impress.
