how to use 2 boards to get 8 channels? are the I2C addresses configurable?

Yes, these boards are addressable. You short ADDR pin to Vcc, or GND or SDA or SCL to program board address. You can use maximum 4 of these boards, total 16 single ended channels or 8 differential. See 5th image on Amazon page for these boards or go to Adafruit website for more details. BTW be aware of knock off ICs. Many boards I worked with were advertised and sold as 16 bit but actual board worked as 12-bit only. So if you work with these and have problems getting 16-bit resolution...you have been forewarned :). Good luck.

Can this read differential voltages higher than the input voltage? I want to read cell voltages in a 48v battery pack

If you use a voltage divider with two resistors you can. Search google voltage divider. But you lose a little bit accuracy. There are good videos on YouTube about this ADS1115 explain all that.

Could I use this to read voltages from 0 to 100 mV from a sensor?

Yes, you can read voltages from 0 to 5V. Be careful not to apply more than 5V or you will destroy the IC.
