What is the life expectancy of this?

I don't think anyone can give a true "life expectancy" on these as each person would use them differently. I have had mine for a few years and make bread about once a week. They clean very well and have held up great.

Why do the directions say to put these pans in the oven at 350 before using them?

I would definitely bake these in the oven at 400 for 30 min or so before the first use. I did that after washing the Bundt pans and reading these other posts here. The pans smoked up the whole kitchen and I bet my cake would have tasted like weird silicone smoke had I not done this.

do the 2 regular size loaf pans stack?

Yes they do. 1 right inside each other

Can you bake vegetables and vegetable fritters in this?

I don't see why not. I love this pan. SO easy to clean up. I just keep a cookie sheet under mine as it's "tippy" when you pick it up. The one thing to remember is that if you are doing baked/roasted veggies they don't "crisp up" like baking them in a metal pan.
