Will this work for 350VAC as well?

Yes. The higher voltage is the max usable limit. As long as the capacitance is the same.

Will this work for a Casablanca Hermosa or Vector 4 speed 120v fan motor?

I am not certain, but if the Casablanca fan requires a 10 micro Farad capacitor , then this capacitor is the correct size/shape and I would personally use this capacitor.

I have this "CBB61 3uf 5% 250VAC 50/60Hz Max Temp 70C E166700" so can I replace mine with yours ?

Generally a 3uF capacitor should be replaced with a 3uF capacitor with equal or greater specs for proper performance. Mine was a 10uF. I don't recommend the swap.
