Can I used this to seal plaster of Paris for painting

I am not sure but I see no reason why it shouldn't. Try on a spare bit to start with.

can you add acrylic colour to white gesso

I understand that gesso is a primer to prepare the object (canvas or mdf for example) for painting. Without it, the paint soaks into the material and the true colour of your paint *may* be affected in the finish. Unfortunately, no leaflet is supplied with the gesso. Lots of helpful information on the internet.

Is it thick? I want to use it for texture

This product has the consistency of thick paint which I used to paint onto MDF as a base coat (to seal) before painting with acrylic paint. Unfortunately, it does not come with any kind of instruction leaflet.

No. You need to look for a gesso that is described as dries clear gesso. This product is not a dries clear gesso.
