Do the cables also work with with Chiaogoo Interchangeable knitting needles?

Yes. The cables that come with the tunisian set were too short for the project I was making, so I used one of the longer cords from my Chiaogoo knitting set and they fit perfectly.

How long are the hooks themselves without the cords attached?

They all measure at least 5 1/2 inches with no cord attached. This is not counting the little screw end to attach the cable. I was comfortable using one with no cable. So I understand your concern that the actual hook portion would be shorter than a normal hook and hard to hold but I have used mine on 3 big projects now and I really like them. I also like how the cables from my ChiaoGoo knitting set also fit on my crochet set.

Do the cables included spin? - I see reviews stating both that they do and don't.

The red cables do not spin, the red cables are called twist. ChiaoGoo spin cables do spin and those are clear. They are not included in this set, but you can get them separately.

Does chaigoo make metal (not bamboo) crochet hooks with as an interchangeable hook set?

As far as I know, they do not, I have looked for metal ones from them myself. I asked in a crochet group I’m in and they said no as well
