Do the black inserts come out so that you can see a photo that has print on both the front and back?

Yes, the black inserts are removable. They are just basically a black piece of paper slid in place. - Great albums, dirt cheap. I couldn't be happier with mine and I've taken them all over the place for over a year.

Will photo prints stick to the plastic over time?

Not really if you provide a climate controlled area. Not the basement or attic.

Would these be large enough for 8 x 10 photos, however their actual size is 8.25 x 10.25?

Yes there is a little more room than your photos would take but not much more
