Just to clarify, Crisco is NOT lard. Lard is animal fat. Crisco is solid vegetable shortening - mostly from soybean oil and palm oil.

How many ounces of oil to deep fry is required with this unit?

You never use more that seven (7) 8-ounce cups of oil. There is an oil level line within the cooker. You set the heat control at 400 degrees and preheat for 20 minutes. Leave heat control at 400 degrees for frying. You can reuse the oil if you strain it to remove any food particles. Store the strained oil in a tightly sealed container in a cool, dark place..........

what size would this be classified as small, medium, large.

I would say medium. It is definitely bigger than a fry baby, and much nicer than a fry daddy as it has a basket that rests on the edge to drain the excess oil after frying. It is perfect size for a couple or small family.
