Perfect texture. No added starch.
I've tried most of the chickpea/lentil pastas. Usually they are made with one or the other. But this one uses both chickpeas and lentils to give the perfect texture. This is the only pasta I buy now. Other similar pastas add starch and tapioca, which are both simple carbs high on the glycemic index. This one has no bad ingredients. And it's organic, which is important when you're eating chickpeas and lentils. My family loves it, too.

Had to go gluten free but I think this is a bit heavy and difficult to digest

It’s not like pasta at all. Bad taste will never buy again :-( Ancient harvest is gluten-free and like real pasta made with organic brown rice,quinoa and corn.
