This is not a cookbook or recipe book. It's a text book. It's educational. You will learn how to cook, not just follow a recipe. You will learn techniques, and the science. It's a great book for people who want to learn how to actually cook. Maybe the best I've seen. It's an understated title as well. It's more than just sauce. It's got soup, meat techniques, etc.

Book Amazing! Amazon Shipping Method Lousy!
The sauce book is wonderful! Awesome! Worth the cost but Amazon Prime Shipping STINKS. Bought as a gift the corners of the book are so damaged on arrival it looks used ($62 book). It arrived loose in a box with other items with no thing wrapped around the book, no wadded paper to fill the space, no plastic bubbles, nothing to protect the book. It is a Christmas gift for my son and I am retired on small income (thank goodness I got it Black Friday sale) but it’s terrible. Amazon tells us what we save in shipping each purchase but they don’t put value on the items they ruin in the shipping method. Very disappointed with Amazon. Again, the recipe book is great. PS Amazon won’t even accept upload of my damage pics to post AI must be reading my review as I write it. :(

Great book, awful binding
I gave this book 4 stars because the binding was awful: the pages were not glued to the spine. I am returning the defective for credit and have ordered another, hopefully the replacement will be fine. This is a gorgeous, thoroughly detailed book and the kind of book one keeps for years. There is lot of detailed information, recipes and excellent photos. The problem, as I said, is the shoddy binding but this may just be an anomaly.

I had to get this book for culinary school and I absolutely love it. Lots of great recipes, and it had great info on the various types of sauces.

This is an awesome book!!! It is like new. It even still has the bookmark ribbon still attached and in good shape. It has 665+ pages in it. I got it pretty fast. I have a prime membership and thought it would be here in 3 days. I think something has changed about prime. I got in in 5 days. Which was fine. It is heavy and very nice. Thank You❣️ A great book seller❣️
