Wüsthof 17-Slot Acacia Knife Storage Block

I'd thought for many months before I finally took the plunge while fully expecting to return in the next day. None of the other Wusthof blocks can accommodate a cleaver or Chinese Chef's knife but I can fit both into the one wide slot. I don't need to fill every slot and the space this allows is better than filling everything to full capacity. Now, finally, I have all my knives organised just as I like them.

Beautiful knife block. Sturdy and attractive. Hold 17 pieces -6 slots are for wide blade knifes, one for scizzors and one for a sharpening hone. The remaining slots are for narrow blade knives and steak knives.If there had been a Wustof block that had more wide blade knife slots I would have purchased it. But this block does hold all the knives I have recently purchased so I am very happy with it and would recommend it as a good purchase for a knife block.

Admittedly up front, this knife block is not for every one. If you have a large collection of knives that you would like to be able to access and to use more frequently, and if you are looking for a safe storage system, and if you do not have small children, then this may be a great solution for you.I carefully researched and finally selected this block after rounding up my knife collection and measuring the blade widths and lengths of each one.This block has 34 knife, 1 hone slot, and 1 scissor slot. I had 36 knives. I compared my collection to the available slot dimensions and considered blocks with fewer slots. In the end, I decided to go for the big one.The block arrived promptly, and was soon filled. The fit and finish of the block is excellent. It looks good. It is fantastic having almost all my knives in one convenient spot.I was able to remove three smaller blocks and bring some knives out of storage. I could not fit one large Chinese style meat cleaver, but was able to fit a smaller vegetable cleaver, both of which were seldom used along with other knives such as my boning knife simply owing to those not being readily accessible.It is a bit of a learning curve at first in finding the knife one is looking for and then making sure that it gets replaced in the proper slot. But that soon passes. The only issue is that both of us have had to learn where each knife goes, and then occasionally straighten out a misplaced knife.The footprint of this unit, while larger than either of the three individual knife blocks it replaced, it is a good deal smaller than all three combined. I had no problems finding a prime spot on a counter for the block and knives.I keep my knives very sharp by regular touch up with a Wicked Edge Knife Sharpening system and using the hone in between sharpenings to straighten and to burnish folded edges. The block does a good job in protecting the edges as all but the steak knife slots are horizontal. All knives are washed and dried after use before being placed in the block, which has long been SOP for us.I have some expensive knives and some less expensive, but nonetheless useful knives, but no matter which knife I need, I can lay my hand on it in an instant. I wish I had sought out and bought this block a long time ago. It took me a few days of gathering data and counting my collection and then getting over the sticker shock at the pricing. But now having used it for a few months, I am very glad to have the block. I wouldn't go back to my prior arrangement--that's for sure.
