Would this wrap around my head, to be used for dental work?

Yes, that should work. The cold pack itself is 10 inches long and bends at each segment. The strap is quite stretchy, so can wrap it around the back of your head.

Will these ice packs fasten around the knuckles/finger joints & stay in place to effectively treat that area or would the area be too small? Thanks.

The fastener works really well you would just have to keep your hand out straight and make sure the fastener is tight. So far I will wrap mine around my ankle and it doesn’t move at all. I really like mine cause I think you could use it for multiple things like your fingers to your head and legs.

How cold do these get?

These packs get pretty cold and the included nicely manufactured pouch gives the gel packs a very nice standoff from your direct skin. If you prefer a colder application, you can place the gel packs directly against your skin. This is not recommended by the vendor but it works for me for just a few minutes at a time.
