## Overview

The ZWILLING Pro 7" Hollow Edge Santoku Knife combines 280 years of German craftsmanship with Italian design finesse. Forged from a single piece of high-carbon, no-stain steel and ice-hardened for superior edge retention, this 7-inch blade features a hollow granton edge to prevent food sticking and a curved bolster for ergonomic, fatigue-free cutting. Its durable POM handle and precision-honed laser-controlled edge make it a versatile, professional-grade tool perfect for slicing, chopping, and rocking motions favored by both Western and Asian culinary styles.

## Description

ZWILLING Pro is the most user-friendly knife available to market. The unique blade shape and ergonomic bolster are the result of 280 years of experience in knife making, and the rigorous study of how knives are used. A unique curved bolster supports the professional pinch grip, with thumb and index finger on the blade, for safe cutting and less fatigue. The blade was redesigned with a broader curve in the front to facilitate the rocking motion of Western cutting, while the straight back is ideal for the Asian chopping motion. The full length of the blade can be used when cutting and can be sharpened from bolster to tip Designed in Italy by Matteo Thun and made in Germany by ZWILLING J.A. Henckels, the company that sets the standard for exceptional cutlery worldwide. The ZWILLING Pro Santoku Knife is a Japanese style chef's knife that is perfect for most kitchen tasks. The blade shape lends itself particularly well to chopping and slicing. The hollow, granton edge helps prevent food from sticking to the blade.

Review: Versatile, strong, razor sharp. - I bought this to add to my Zwilling Pro set. Was looking for a hollow blade general purpose knife that was less of a rocker and more straight edged than my chef knife. This is a beautiful piece and compliments my other Z-Pros. It is true to the Asian style with a very sharp angle cut (11°) and wide blade, making for a great knife in my block and cutting boards. Regarding the Pro line, I found I prefer this to other premium designs because of the bolster design that encourages proper grip and perfect balance. Also, the edge is sharp tip to heal, something many chefs might prefer.
Review: Excellent but unconventional santoku - I have had this knife for a few months and I like it as a good utility knife. It is very versatile, and the quality is superb, just like other Zwilling Pro knives I own are of superb quality and design. This particular model is surprisingly heavy for a santoku, and it is not balanced like a typical santoku. It is heavy at the handle. My understanding is that Zwilling also makes a "slim" santoku that may weigh less. I don't consider the weight and balance to be defects, but they are features that affected how I learned to use the knife. The knife serves well as a santoku, and can also serve as a chef knife. It's also a very good vegetable knife, and it serves well as a vegetable cleaver. So, it is functionally a good santoku, but according to an unconventional design sensibility.

## Questions & Answers

**Q: What is the best way to sharpen this knofe?**
A: Talking to a Henkels rep at Costco about our knives getting dull my husband came home from Costco with a two stage manual sharpener that was recommended by the rep. I am not impressed with it. We did not get our knives from Costco. We have had the many years (at least 20). My husband has always sharpened them with a wet stone or with the steel that comes with the block. Zwilling will take them in to sharpen them or you can take to another knife shop to sharpen. These last two options are what I think needs to be done to our knives since the other methods no longer work well. Seems like you need to have them professionally sharpened every 10 or 15 years. The pro series are supposed to be heirloom knives.

**Q: How much did you pay for this knife? It's currently $150**
A: I bought my knife in June if 2020 for $140 from Amazon. It is my favorite knife. Most of my knives are pro series Henkels. I bought it from Amazon because it was significantly cheaper than buying from the Zwilling (Henkels website). You can pay less if you get the lower quality Henkels, but they are made in China or Spain, not Germany. Hope this helps.

**Q: What are the key differences between this four star ii santoku from zwilling, and the pro santoku from zwilling?**
A: The biggest differences are in the handle and bolster. Both are forged blades made in Germany, but the Four Star II series has a 3/4 tang molded into the handle with a stainless steel end cap to add balance. The Pro series has a full tang attached with rivets, but also has a unique bolster that makes holding the knife very comfortable and ergonomic, it eases the hand into a "pinch grip" for more comfort and control.

**Q: Is there a red logo on the handle?**
A: No red logo. Knife is one of my two favorites out of several (too many).

### ⭐⭐⭐⭐⭐ Great quality knife!! Feels great in your hand and cuts through almost everything like butter!
*by Z***T on July 14, 2020*

I love this knife! Requested it for my birthday! It matches the knives set and block that we bought about 25 years ago. I love my J.A. Henkels/Zwilling knife set! The knives have held up so well over the years and I expect this one will be the same! Even through years of teenagers and adult children using them. They haven't pitted from teenagers not always washing or rinsing them immediately after use. That said I have tried to hand wash, dry and put away after use. I don't put them in the dish washer, and I try to keep the blades protected (storing them in the knife block or in the drawer with a protector over the blade). Two things that I would say 1) be careful it is sharp. I cut myself the first time that I used this knife. 2) Follow the directions for sharpening the knife. This knife could easily become an heirloom that you can pass down to your kids/grandkids. I do wish that it came with a blade protector.
